In this edition of “Mix Your Menu,” we focus on new takes on NYC’ 5 Boroughs cocktails that you can fold into your drink menu, courtesy of Breakthru Beverage Development Specialist Mike Page.
“These are my personal adaptations for these classic drinks that encompass what I feel the 21st century palate would enjoy,” Page said. “I replaced the ‘Staten Island’ with the ‘Red Hook’ because the ‘Staten Island’ was a bit of a rattlesnake—not really one of the originals. The ‘Red Hook’ is much more applicable to the style of old school cocktails.”
2 oz. rye whiskey
1 oz. sweet vermouth
1 dash aromatic bitters
Glassware: Stemmed cocktail glass
Method: Combine all ingredients in mixing glass, add ice and stir for 15 seconds. Strain into chilled cocktail coupe.
Garnish: Cocktail cherry
2 oz. rye whiskey
.5 oz. sweet vermouth
.5 oz. maraschino liqueur
Glassware: Stemmed cocktail glass
Method: Combine all ingredients in mixing glass, add ice and stir for 15 seconds. Strain into chilled cocktail coupe.

2 oz. London dry gin
.75 oz. sweet vermouth
.5 oz. dry vermouth
.75 oz. pineapple juice
Glassware: Stemmed cocktail glass
Method: Build all ingredients in shaker tin, add ice and shake hard for 5-6 seconds. Open shaker and strain into glass with fresh ice.
Garnish: Garnish with essential oils of orange peel, hook on rim.
