Many spirit companies have begun to experiment with finishing casks. Not only does it provide another way to innovate and evolve, it’s a great point of differentiation in a saturated market space.
But what is a “finished” spirit?
Finishing is the process of removing a spirit from the barrel it has been matured in up to that point, and then “resting” it in a different barrel for a short period of time before finally being bottled.
Sherry-finished Scotch whiskies might be the most recognizable finished spirit on the market, but a recent wave of rum, red wine, bourbon and port cask-finished spirits have also spilled into stores and on to drink menus.
